The Dong Ding mountain range in Lu Gu County is one of the oldest tea-growing areas in Taiwan. Despite its relatively low altitude (700-800 m), its name literally means "Frozen Peak." In the early days of tea cultivation, local farmers did not wear shoes, and during the spring harvest, the mountain peak was usually still covered with snow.
Currently, the name Dong Ding (Dung Ti) is also used to refer to teas from other areas that are processed in the same way as oolongs from the Dong Ding mountain range. This is characterized primarily by a higher degree of roasting, which gives the tea deeper, more pronounced spicy or fruity tones, depending on the length of the process.
